"Hernerokka" yields better results.<br /><br />As far as mustard goes... Coleman's prepared is my favorite, although still not the same kind as Finnish. I think a lot of the American deli mustards are vinegary, that's why you don't quite get the same results. <br /><br />Also, just recently on PBS I saw an episode of New Scandinavian Cooking, where Andreas Viestad made two different kinds of pea soups side by side. One from fresh green peas and one from dried yellow. Check your local PBS station if it carries it.<br /><br />According to Wikipedia in Sweden pea soup is made from yellow, but in Finland from green peas. Which is odd, since I'm used to yellow pea soup. I don't think tastewise there's any difference. I love Beatrice's cookbook (I actually have two copies!), but the index is awful, and it really needs photos! <br /><br />You should try the prune tart cookies, they are really easy. My kids make them by themselves, even the first grader.
